Summer Roasted Sweet Potatoes

Summer time means BBQ time and having a quick go-to recipe that is healthy, food safe and easy to prepare is key if you're pregnant, nursing or have kids.

Summer Roasted Sweet Potatoes

Kids love them because they are sweet (without any added sugar) and easy to munch on. Most hubbys love them because they're baked in the oven and don't take up any valuable real estate on the grill.

4 medium-large sweet potatoes (washed)
2 teaspoons coconut oil (melted)
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt

Preheat your over to 350.

Thoroughly wash the sweet potatoes and cut each one in half, lengthwise.

In a small bowl combine the coconut oil, cinnamon and salt - stirring until fully mixed together. Using a pastry brush or your fingers, liberally cover all sides of the sweet potato with the coconut oil mixture.

On a parchment paper lined baking sheet, place the potatoes cut side down. Put the potatoes in the oven and bake for 25 minutes.

Summer Roasted Sweet Potatoes

Remove the sheet from the oven and allow the sweet potatoes to cool for 10 minutes. Using a spatula, turn over the potatoes, cut in half, and place them on a plate for serving.


Alternative: Want to add a little sweet heat? Mix together 2 tablespoons of warm honey with 1/8 - 1/4 tsp cayenne pepper and rub it on the cut side of the potatoes before roasting.
