I started making overnight oatmeal just a few weeks ago and I can’t stop. It’s just so easy!

Much like the Vanilla Berry Bliss recipe this too is filled with Omega 3’s & 6’s, protein, fiber, calcium and all things delicious. A quick breakfast that helps promote lactation, feeds your belly and is a great source of the energy you need whether you're pregnant, nursing or just a mom trying to make it through the day.
½ cups rolled oats (gluten-free)
1 cup almond milk
1 tablespoon chia seeds
1 tablespoon honey
1 pinch of salt
½ peach – pitted and chopped
¼ teaspoon fresh grated ginger
1 tablespoon coconut almond crumble
Directions (MAKE THE NIGHT BEFORE)
In a small bowl mix the oats, chia, honey, pinch of salt and almond milk. Mix thoroughly to ensure the chia seeds do not clump together. Cover mixture and place it in the refrigerator.
In a separate bowl place cut peaches, blueberries and grated ginger. Mix, cover and place it in your fridge. This can also be made the morning of.
When you wake-up in the morning give the oat mixture a few turns with a spoon. The oats and chia will have absorbed the almond milk overnight and should be the perfect consistency. If the oats seem a bit too thick, feel free to add more almond milk until you reach your desired consistency.
Place the fruit mixture on top of your oatmeal and sprinkle with coconut almond crumble.
Easy. Simple. Delicious!
