Grilled Bananas with Chilled Cherry Puree & Pistachios

I tend to prefer salty snacks over sweet treats, but I still love the taste of a decadent dessert after a meal. Let’s face it, desserts are delicious!

We love it for pregnant and nursing moms because it’s packed with the nutrients essential for them to grow and feed a baby and is free of many of the allergens moms may need to avoid while breastfeeding.

Here is a quick highlight of the ingredients:

Bananas: High in potassium and fiber, these hand-held fruits also contain B-6, a vitamin used to help grow new cells which is something pregnant and nursing moms are doing double-time. Bananas also contain tryptophan which can help the mind relax. What parent on the planet couldn't use a little extra relaxation?

Cherries: This wonder fruit is high in fiber, Vitamin C & A, iron and folate. Cherries are also loaded with antioxidants that help reduce inflammation and can help regulate a mom’s sleep cycle (Note: Unfortunately this does not have any effect on your baby’s sleep cycle).

Coconut Oil: The saturated fat in coconut oil contains lauric acid which is known to help improve good cholesterol and your overall cholesterol level ratios. Coconut oil also has anti-fungal and anti-bacterial properties and helps your body absorb fat soluble vitamins such as A,D,E & K.

Dietary Info


2 moderately ripe or ripe organic bananas*
1 cup organic frozen cherries*
¼ cup chopped pistachios (you can also use almonds or forget the nuts completely)
1 tablespoon coconut oil
½ teaspoon vanilla extract
¼ teaspoon cardamom

*If possible use organic. Cherries are one of the “Dirty Dozen” and the bananas will be cooked with the skin on.

Leaving the peel on, use a large knife to cut down the length of the banana.

Grilled Bananas with Chilled Cherry Puree & Pistachios

In a bowl combine the coconut oil and cardamom. Rub the coconut oil mix on the inside of the banana.

Warm your grill. On medium heat, place the bananas face side down for 4-5 minutes. Turn over the bananas and cook peel side down for an additional 5-7 minutes or until the peel begins to pull away from the banana. Remove from the grill.

Inside, place the frozen cherries and vanilla extract in a food processor or high powered blender and mix. Place the banana on a platter, top with the chilled cherry mix, sprinkle with pistachios and serve. DELICIOUS!!!

Tip: An indoor grill pan can be substituted if you do not have an outdoor grill.
